Yummy!<\/p>\n<p>Welcome back to <strong>the Baker\u2019s Dozen<\/strong> and to this month\u2019s <strong>tried and tested recipe<\/strong> for Millionaire\u2019s Shortbread.<\/p>\n<p>As many of you may know, shortbread is originally Scottish in origin. You can read more on the history of shortbread <a href=\"https:\/\/britishfoodhistory.com\/2012\/06\/10\/shortbread\/\">here<\/a>, and the recipe included in the link will provide you with a delightful bite with a cup of tea; but today we\u2019re looking at Millionaire\u2019s Shortbread. \u00a0I am sorry to say that by baking or eating it does not make you a millionaire, if it did I would be a multi-millionaire by now!\u00a0 The most common explanation for the name seems to come from the range of ingredients needed to make it.\u00a0 This delightful \u2018sweet\u2019 is essentially a layer of shortbread, topped with a layer of chewy caramel and then finished with a layer of chocolate &#8211; a homemade and just a little bit <strong>larger than life<\/strong> Twix bar.\u00a0 It is very nice indeed but be warned; it is quite sweet and even though I have a sweet tooth, I can only really eat a small square of it.<\/p>\n<p>My children have tested Millionaire\u2019s Shortbread many times in countless caf\u00e9s in the UK but I haven\u2019t made it until very recently.\u00a0 This recipe was given to me by my sister and she has made it countless times for her children and they have assured me that it is most delicious.\u00a0 My children have introduced some of their friends to it and now whenever it\u2019s made, we do have to send some into school for the friends &#8211; although my youngest daughter isn\u2019t too keen to share it!<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/Millionaires-Shortbread.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-4481 alignright\" src=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/Millionaires-Shortbread.jpg\" alt=\"\" width=\"497\" height=\"310\" \/><\/a><\/p>\n<p><u>Millionaire\u2019s Shortbread<\/u><\/p>\n<p><u>Shortbread base:<\/u><\/p>\n<p>100g unsalted butter<\/p>\n<p>50g <strong>caster sugar<\/strong><\/p>\n<p>175g plain flour<\/p>\n<p><u>Topping: <\/u><\/p>\n<p>400g of condensed milk<\/p>\n<p>100g caster sugar<\/p>\n<p>100g unsalted butter<\/p>\n<p>2 <strong>tbs<\/strong> <strong>golden syrup<\/strong><\/p>\n<p>175g milk or <strong>plain chocolate<\/strong><\/p>\n<p><u>Method<\/u><\/p>\n<p>Heat oven to 180\u00ba<\/p>\n<p>Base<\/p>\n<ol>\n<li><strong>Cream<\/strong> the butter and sugar <strong>together <\/strong>until light and <strong>fluffy<\/strong>.\u00a0 Add the flour and stir until the mixture binds together.<\/li>\n<li><strong>Kneed<\/strong> until smooth and press the mixture into the base of a greased shallow 20cm square tin.<\/li>\n<li><strong>Prick<\/strong> all over and bake in oven for 20 \u2013 30 minutes until golden brown.\u00a0 It\u2019s best to take it out when it is just starting to turn golden, if you leave it too long it will be a little too hard. \u00a0\u00a0Leave to cool<\/li>\n<\/ol>\n<p>Topping:<\/p>\n<ol>\n<li>Place the condensed milk, sugar, butter and syrup in a pan and heat gently until sugar is dissolved, then boil for 6 \u2013 8 minutes, stirring all the time.\u00a0 This is the caramel topping.<\/li>\n<li>Remove from heat and cool slightly.<\/li>\n<li>Pour the caramel topping over the shortbread base and allow to cool completely.<\/li>\n<li>Melt the chocolate and spread over the caramel.\u00a0 Leave to set and cut into squares.<\/li>\n<\/ol>\n<p>Sit back and enjoy with a cup of tea or coffee but to burn off the huge amount of calories you will have consumed with just one piece, you will need to go, at least, for a very <strong>brisk <\/strong>walk.<\/p>\n<p><strong>Vocabulary <\/strong><\/p>\n<p><strong>Tried and tested: <\/strong>used many times before and proved to be successful<\/p>\n<p><strong>Larger than life: <\/strong>an object that attracts a lot of attention because it is more interesting than it\u2019s equivalents<\/p>\n<p><strong>Caster sugar: <\/strong>white sugar that is finer than sugar used for tea and coffee, it\u2019s especially used for cooking<\/p>\n<p><strong>Tbsp:<\/strong> a large spoon used for measuring food and liquids and it\u2019s equivalent to about 15ml or 15g.<\/p>\n<p><strong>Golden syrup: <\/strong>a thick, sweet, gold &#8211; coloured liquid used in cooking to make food sweet<\/p>\n<p><a href=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/golden-syrup.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4483\" src=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/golden-syrup.jpg\" alt=\"\" width=\"248\" height=\"186\" srcset=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/golden-syrup.jpg 480w, https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/05\/golden-syrup-300x225.jpg 300w\" sizes=\"(max-width: 248px) 100vw, 248px\" \/><\/a><\/p>\n<p><strong>Plain chocolate:<\/strong> also known as dark chocolate and contains around 70% cocoa or higher<\/p>\n<p><strong>Cream (together): <\/strong>the action of beating food together, either through using a wooden spoon or a whisk, to make a smooth and pale mixture<\/p>\n<p><strong>Fluffy: <\/strong>for cooking the mixture will be fluffy when it has been beaten together and is full of air<\/p>\n<p><strong>Kneed:<\/strong> to work into a uniform mixture by pressing, folding and stretching.\u00a0 It\u2019s a similar action to make bread.
