I know that I have had the same one for a few years and you can see how successful I\u2019ve been when you consider I am still making it.\u00a0 Yes, it\u2019s the resolution we all make after the excesses of Christmas \u2013 it\u2019s time to lose weight: Hola operaci\u00f3n bikini!<\/p>\n<p>Now as we all know cakes don\u2019t really fit into a diet plan as they are most certainly not low in calories and for the most part are not seen as healthy\u2026\u2026.or are they?\u00a0 One of my colleagues only recently tried today\u2019s recipe as he had consistently refused in the past as he thought it sounded far too healthy to be tasty. And my husband was never keen to try it as, \u2018it just didn\u2019t sound right\u2019.\u00a0 Both myself and my daughter love this cake and have enjoyed completing a survey on the best ones available in the caf\u00e9s here in Barcelona.\u00a0 The only problem is that we can\u2019t remember which is the best one, so what a shame that we have to start all over again.\u00a0 I like to think that this is a healthy cake, so it really can be part of a diet and for my youngest daughter who is not keen on vegetables, she thinks that a piece of this cake is the equivalent of a portion of vegetables &#8211;\u00a0 I like her thinking. So here we have a recipe for <strong>carrot cake. <\/strong><\/p>\n<p>I have to confess that I have never made this cake; every time I have mentioned it my eldest daughter has <strong>taken over<\/strong> from me in the kitchen as she loves to make it and I have become just the kitchen assistant. This recipe was given to me by one of our teachers; many thanks Perian, it\u2019s a great recipe.\u00a0 The following measurements are American.<\/p>\n<p><u>Carrot Cake<\/u><\/p>\n<p>1\u00bd cups sugar<\/p>\n<p>1 cup vegetable or sunflower oil<\/p>\n<p>3 large eggs<\/p>\n<p>2 cups flour (if you use <strong>self raising flour<\/strong> then <u>do not<\/u> add baking soda)<\/p>\n<p>1\u00bd <strong>tsps<\/strong> ground <strong>cinnamon<\/strong><\/p>\n<p>1 tsp <strong>baking soda<\/strong><\/p>\n<p>1 tsp vanilla<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>\u00bc tsp <strong>nutmeg<\/strong><\/p>\n<p>3 cups <strong>finely shredded\/grated<\/strong> carrot<\/p>\n<ol>\n<li>Heat the oven to 180\u00bac.\u00a0 Grease the bottom and sides of rectangular <strong>cake tin<\/strong> with vegetable or sunflower oil (DO NOT use olive oil).<\/li>\n<li>Mix sugar, oil and eggs in a large bowl until blended; beat for about 1 minute.\u00a0 Stir in the remaining ingredients except the carrots.\u00a0 Beat for about 1 minute. Stir in the carrots.<\/li>\n<li>Place the mixture into the cake tin and then bake in the oven for about 40 to 50 minutes, or until a knife is inserted and comes out clean.\u00a0 Cool completely until the cake reaches room temperature and is ready for the cream cheese frosting.<\/li>\n<\/ol>\n<p><u>Cream Cheese Frosting<\/u><\/p>\n<p>200g Philadelphia cream cheese<\/p>\n<p>\u00bd cup butter<\/p>\n<p>2 tsps vanilla<\/p>\n<p>250g <strong>powder sugar<\/strong><\/p>\n<ol>\n<li>In a large mixing bowl <strong>beat<\/strong> the cream cheese, butter and vanilla with an electric mixer until light and fluffy.<\/li>\n<li>Gradually beat in the powder sugar to reach a spreading consistency<\/li>\n<li>Spread the frosting over the cake, cover with <strong>plastic wrap<\/strong> and place it in the fridge. It does make a lot of frosting and we have cut the recipe in half as it was too much for us; alternatively cut the cake in half and place some frosting in between as well.<\/li>\n<li>When the cake is cold, the plastic wrap will come off clean.<\/li>\n<\/ol>\n<p><a href=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/01\/Carrot-Cubes.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-4337\" src=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/01\/Carrot-Cubes.jpg\" alt=\"\" width=\"232\" height=\"154\" srcset=\"https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/01\/Carrot-Cubes.jpg 620w, https:\/\/virtualcampus.kingstraining.com\/wp-content\/uploads\/2018\/01\/Carrot-Cubes-300x199.jpg 300w\" sizes=\"(max-width: 232px) 100vw, 232px\" \/><\/a><\/p>\n<p><u>Vocabulary<\/u><\/p>\n<p><strong>Resolution:<\/strong> a promise that you make to yourself to do something;
